Throughout its long history, Olivier salad has become a traditional dish on the festive table. The familiar combination of ingredients always evokes a New Year's mood during the winter holidays. Which recipe for Olivier salad can be considered classic: the one prepared by Lucien Olivier or the recipe with boiled sausage and canned green peas? I believe both versions have a right to exist. Today I decided to remind you of the Olivier recipe with sausage to recall the taste of childhood. For this recipe, it's best to use high-quality premium boiled sausage and canned green peas from brain varieties. The salad turns out to be tasty, hearty, and juicy. It will be appropriate both on weekdays and holidays!

Serves:
Boiled sausage - 400 g
Chicken eggs C1 - 4 pc
Potato - 4 pc
Carrot - 1 pc
Pickles - 3 pc
Canned green peas - 200 g
Onion - ½ pc
Leek - 1 bunch
Mayonnaise Provencal - 100 g
Ground black pepper - 0.3 tsp
Salt - ½ tsp

Wash the potatoes and carrots thoroughly, boil them in their skins until cooked. Peel the vegetables cooled to room temperature, dice them.

Boil chicken eggs until hard, cool in cold water, peel, and cut into cubes. Similarly, chop the boiled sausage, peeled from the casing.

Cut off the tails of the pickled cucumbers, peel the vegetables, and dice them. Peel half of the onion and finely chop it.

In a deep salad bowl, combine all the chopped ingredients. Add canned green peas, drained from the marinade, to the salad.

Salt the salad to taste, season with ground black pepper. Add finely chopped green onions, dress the olivier with a small amount of mayonnaise.

Thoroughly mix the salad so that all the ingredients combine with each other.

Place the Olivier salad with sausage in the refrigerator for 1 hour to let the salad infuse and cool.
