The delicate white flesh of saffron cod will reveal a new dimension if, after frying, you allow it to simmer in an aromatic sauce with onions, carrots, and tomato paste. This dish will acquire a pleasant piquancy and a slight tanginess from the vegetables, transforming into a hearty yet not overly caloric treat. Saffron cod pairs wonderfully with any side dish, be it fluffy potatoes or fragrant rice.

Prepare the navaga: thaw if necessary, gut, rinse thoroughly, and pat dry. Peel the carrots and onions. Get a plate, cutting board, and a lidded frying pan ready.
Divide each navaga carcass into 2-3 pieces. Season them evenly with black ground pepper and ¼ teaspoon of salt.
Spread the flour on a flat plate. Heat a skillet over medium-high heat, adding 2 tablespoons of sunflower oil.
Dredge each piece of fish in flour and carefully place it into the hot oil. Fry the saffron cod on all sides until golden brown, approximately 6-7 minutes. Transfer the fried fish to a bowl or small pot.
Cut the carrots into thin sticks and the onion into thin quarter rings. In the same pan, heat the remaining 1 tablespoon of oil and fry the onion until lightly golden, stirring constantly.
Add the carrots to the onions and continue to sauté for another 3-4 minutes, stirring until the carrots are tender.
Add sugar and ¼ teaspoon of salt to the vegetables. Add vinegar, bay leaf, cloves, and allspice. Mix everything thoroughly.
Dilute the tomato paste with water and pour the resulting mixture into the pan with the vegetables. Stir again and carefully place the pieces of fried fish into the sauce.
Wait for the sauce to boil, then reduce the heat to low. Cover the pan and simmer the fish in the sauce with vegetables for 10-15 minutes.
Serve the cooked saffron cod with tender boiled potatoes and fresh cucumber slices, savoring every bite of this flavorful dish.
