Begin by preparing all the necessary ingredients: sift the flour, thoroughly wash and dry the egg, boil the water, and take the yogurt out of the refrigerator in advance so it reaches room temperature. Prepare a frying pan for the pancakes.
In a deep bowl, combine the drinking yogurt with the chicken egg.
Add sugar and a pinch of salt to the yogurt and egg mixture. Whisk everything thoroughly with a fork or whisk until smooth.
Carefully sift the flour into the liquid base. Mix thoroughly to achieve a smooth, lump-free batter.
In a separate bowl, dissolve the baking soda in boiling water, then pour this mixture into the batter. Stir well again and let the batter rest for 5 minutes for the soda to activate.
Add half of the vegetable oil to the dough and mix thoroughly. The dough should be quite liquid.
Grease the pan with the remaining oil and heat over medium heat. Pour in a small amount of batter, spreading it evenly over the entire surface of the pan by rotating it. Fry the pancake for 3-4 minutes until golden brown, then flip it over and brown it on the other side. Repeat the process with all the remaining batter.
Serve the finished pancakes, folded into triangles or envelopes, on a plate. Drizzle with your favorite berry jam and enjoy this warm and fragrant treat!
