Buckwheat and meat patties, also known as grechaniki, are a wonderfully hearty, tender, and delicious dish that offers a fantastic alternative to traditional cutlets. While preparation takes some time, the result is well worth the effort! The aromatic tomato sauce lends a pleasant tang and spice to the grechaniki, making them truly unforgettable. Serve these appetizing patties with a light side dish, such as mashed potatoes, a fresh salad, or fluffy rice.

Buckwheat - 85 g
Egg - 1 pcs.
Veal - 200 g
Onions 2 pcs. - 1 pcs.
Water - 100 ml
Refined sunflower oil - 2 tbsp.
Salt - to taste
Ground black pepper - to taste

Dill - to taste
Tomato sauce - 5 tbsp.

Carefully sort and rinse the buckwheat. Wash the egg, meat, and onion. Peel the onion. Boil 0.5 cups of water. Prepare a saucepan, meat grinder, and frying pan.
Bring water to a boil in a pot and add salt. Stir in the buckwheat groats and cook until tender, about 15 minutes.
Mince the veal. Finely chop the onion in the same manner. Combine these ingredients in a deep bowl.
Season the minced meat with salt, black pepper, and your favorite aromatic spices. Mix thoroughly.
Add a chicken egg and boiled buckwheat to the minced meat. Mix until smooth.
Form small, neat patties from the minced meat.
Heat the sunflower oil in a pan. Place the buckwheat patties in the pan and fry for 2-3 minutes on each side until golden brown.
Pour 0.5 cups of hot water into the pan. Cover and simmer the buckwheat patties for about 7-10 minutes.
Add the tomato sauce to the pan. Stir gently. Continue cooking the grechaniki with the lid on for another 10 minutes.
Serve the buckwheat patties immediately after cooking, accompanied by creamy mashed potatoes. Garnish the dish with finely chopped dill for freshness and aroma.
