Turkey drumstick meat can seem tough and bland, but this recipe will transform it! Thanks to a marinade with soy sauce, balsamic vinegar, and aromatic herbs, the poultry will become incredibly tender and infused with a rich, full-bodied flavor. Choose steaks from the upper part of the drumstick, at least 1.5–2 cm thick, with a bone fragment in the middle – they will remain firm during cooking, won't dry out, and will absorb the marinade beautifully. Pan-fry the marinated steaks until golden brown, then finish them to perfection in the oven.

Soy sauce - 3 tbsp.
Olive oil - 2 tbsp.
Refined sunflower oil - 2 tbsp.

Rinse the turkey drum steaks and pat them thoroughly dry with a paper towel to remove excess moisture. Wash the lemon. Prepare a citrus juicer, a spacious bowl, a frying pan, foil, and a deep baking dish.
Cut the lemon in half and squeeze the juice into a bowl using a juicer. Add soy sauce, olive oil, and balsamic vinegar. Stir in the dried basil and Herbes de Provence, then add salt. Mix thoroughly until the salt crystals are completely dissolved in the liquid.
Place the turkey steaks in the prepared marinade. Turn them over several times to ensure the meat is fully coated with the aromatic seasonings. Cover the bowl with the turkey with plastic wrap and refrigerate for 2–3 hours. Periodically remove and turn the meat to ensure even marination.
Place the marinated turkey drumstick steaks on a sieve or rack to drain off excess liquid. Pour 1.5 tablespoons of refined vegetable oil into a frying pan and heat it thoroughly over high heat.
Place the steaks in the pan and sear them for 3-4 minutes on each side until a delicious brown crust forms. Remove the pan from the heat.
Preheat the oven to 375°F (190°C). Grease a baking dish with 0.5 tbsp of vegetable oil. Carefully arrange the seared turkey drum steaks in the dish, leaving a small space between them.
Evenly pour the remaining marinade from the bowl over the turkey. Tightly cover the baking dish with the steaks with foil. Place it in the oven and bake the poultry for 35–40 minutes. Then remove the foil and allow the steaks to brown for another 10 minutes. Take the turkey out of the oven, let it cool slightly, and serve.
Arrange the baked turkey steaks on fresh salad leaves. Garnish the dish with cherry tomato slices for a vibrant accent.
