Prepare potatoes in sour cream for dinner or lunch. Despite the simplicity of the preparation, this dish has its own nuances that are best taken into account. First, choose a variety of potato suitable for frying—these are typically varieties with pink skin, such as "Ryabinushka" or "Romano." To prevent the dish from turning into mush, cut the pieces into a uniform size, soak them in water for 30 minutes, and pat them dry.

Cut the potatoes into equal-sized wedges no more than 1 cm thick.
Soak the sliced potatoes in cold water for 30 minutes to remove the starch, then pat the wedges dry with a paper towel.
Slice the onion into half-rings and grate the cheese using a fine grater. Chop the dill as finely as possible.
Pour sunflower oil into a frying pan, heat it up, and sauté the onion until it turns golden brown.
Add the potatoes to the onion, reduce the heat, and fry under a lid for about 15 minutes.
Combine the sour cream with water and pour it over the potatoes. Stir the mixture and increase the heat. Avoid adding too much water to the sour cream to prevent it from curdling. Simmer the potatoes for 10 minutes until the liquid has mostly evaporated.
Season the dish with salt and pepper, add the cheese and herbs, then stir. Reduce the cooking temperature and simmer for another 5-7 minutes until the cheese has melted.
Add the bay leaf, cover the pan with a lid, and turn off the heat. Let it sit for 5 minutes. Be sure to remove the bay leaf.
